Please give a warm Ella welcome to Meg Gillmer. Better known as The Wholesome Athlete, Meg is a Sydney-based cyclist and passionate foodie. Currently a student at the Institute of Integrative Nutrition, meg is on a mission to bring us all fresh, seasonal and simple food to get the most out of our bodies and move away from processed products. She’ll be sharing some of her favourite recipes with us.
The roaring red smoothie is one of my favourite recipes. I love the colour and the flavour but most of all, the amount of health benefits the ingredients hold.
Beetroot has been increasingly studied for its benefits for athletes. It is an excellent source of iron beneficial to women, vegetarians and athletes. It has even been said to improve athletic performance.
Full of nitrates, beetroots help reduce inflammation and are a rich source of antioxidants. Coconut water is a great source of potassium and magnesium, essential for endurance sports. You can make this ahead of time, store in the fridge and enjoy after exercise or as a refreshing drink.
Place all the ingredients in a blender and blend until smooth.
